Carrot Cake Sandwich Cookies

A wholesome cookie (carrots are a health food aren’t they?) Super moist, packed with flavor and cream cheese frosting, essentially Carrot cake in cookie form.

I personally think these with toasted crushed pecans in the batter could stand alone, without the addition of the cream cheese frosting, but the frosting just “puts the icing on the cake” – as the expression goes! A true crowd pleaser.
