Oatmeal Cranberry Delights

Cookies loaded with Oatmeal, Pecan’s and Cranberries. It is a lovely marriage of sweet and tart. My version of the Oatmeal Raisin Cookie. I have always had a problem with cooked or baked raisins. In fact there is a saying that used to be a motto of mine “Raisin cookies that look like chocolate chip cookies are the reason I have trust issues.”

Yet come fall, I would crave oatmeal cookies every year. Then one autumn when the fresh cranberries hit the markets the inspiration came to use the tasty burgundy jewels instead of the detested raisin. However I use dried cranberries so I can enjoy these year round.
